
CULTIVATION
The team that takes care of the olive groves consists of the leading agronomist and specially trained cultivators who rake the soil, prune and pick the fruits by hand every year.
The Lianolia tree tends to exceed 12-14 meters in height. However, in order for this variety to produce its particularly valuable fruits, it must be harvested properly, i.e., the fruits must be picked before they ripen more than they should. In order to do this, our oldest olive trees were pruned in such a way that they were lowered so that they were accessible to be picked by hand.
Then, from year to year, in order for the trees to “breathe” more openly, they are pruned again at the right time, with the aim of maintaining the right height and stable production, and with the ultimate goal of maintaining the high quality of the organoleptic characteristics of our olive oil.
