THE SOIL

The family olive groves are located between the semi-mountainous village of Kouspades and the traditional fishing village of Boukari.

In the mountainous Kouspades the soil is quite rocky, with properties that favor the wild Lianolia.

The village of Kouspades was created during the Venetian period by a nobleman trusted by the Venetian commander, called Kouspas. Signs of that time are evident even today in some of the village’s houses.

CULTIVATION

The team that takes care of the olive groves consists of the leading agronomist and specially trained cultivators who rake the soil, prune and pick the fruits by hand every year.

The Lianolia tree tends to exceed 12-14 meters in height. However, in order for this variety to produce its particularly valuable fruits, it must be harvested properly, i.e., the fruits must be picked before they ripen more than they should. In order to do this, our oldest olive trees were pruned in such a way that they were lowered so that they were accessible to be picked by hand.

Then, from year to year, in order for the trees to “breathe” more openly, they are pruned again at the right time, with the aim of maintaining the right height and stable production, and with the ultimate goal of maintaining the high quality of the organoleptic characteristics of our olive oil.

ORGANIC AGRICULTURE

For the production of ROYAL FROG ORGANIC selected olive groves are cultivated only with organic means and methods, according to the valid European and international protocols (DIO, USDA Organic).
In the olive groves at a distance of about 1.650 meters, no harmful pesticides are used and the olive trees grow in a controlled uncontaminated natural environment.
Only organic products are used to nourish and protect the olive trees, thus ensuring the purity, the fruition and naturalness of their fruits.

HARVEST

Lianolia is a rare and disobedient variety and at the same time particularly sensitive. The only way to harvest it unharmed, to achieve low oxidation and preserve its organoleptic characteristics, is to pick it very carefully.

In our olive groves we harvest the crop according to the weather and the ripening process of the fruit, which we carefully monitor in all our olive groves, day after day, year after year.

With this methodology we aim to achieve, regardless of the weather conditions, consistent quality and, above all, a consistently high content of polyphenols in ROYAL FROG, this miraculous ingredient for the health of the human body.

PRESSING

After selecting the best fruits, the crop is transferred directly to the olive mill.

Milling is done quickly, within a few hours, in order to avoid an increase in acidity levels and to maintain the high-quality organoleptic characteristics of the olive oil.
The extraction process is done “in cold” that is, at particularly low temperatures and with a double distillation process.
Another “Production Protocol” that is followed reverently in the production of ROYAL FROG Extra Virgin Olive Oil.

CHEMICAL ANALYSIS

According to the instructions of our accredited chemists and taster, a sample of the olive oil is examined in an accredited chemical laboratory where all data for its nutritional and organoleptic characteristics are carefully analyzed.
This process is repeated frequently, throughout the product’s journey, from the mill to the bottling plant, in order to precisely monitor the evolution of the chemical composition of the olive oil and to validate the final quality of its nutritional values.

BOTTLING

ROYAL FROG is packaged in glass bottles with a UV filter, impervious to solar radiation, protecting the content from its harmful effect on the final product.

During bottling, as well as during all stages, until the transport of the product to its destination, the strictest rules of safety and quality control are observed, in order for the quality of the product to remain unchanged.
The premises have all the necessary certificates in accordance with the European Regulation for Food Safety and Hygiene as well as by the Food and Drug Administration of the USA.

DISTRIBUTION

After ROYAL FROG makes its long journey, until it reaches its final destination, it is stored with maintenance standards regarding temperature, sun protection, hygiene and safety.
